Special Recipes for Navratri Festival – Fruit Raita and Curd Potatoes

Navratri is the special festival to enjoy the food recipes. Even though some of our family members observe fasting, the remaining people will enjoy the special food festival at home. Here we are giving ingredients’ list and preparation methods for Aval Kesari, Fruit Raita, and Curd Potatoes.

Aval kesari

Ingredients:

½ cup sugar, saffron color, ½ cup rice flakes, ¼ tsp cardamom, 5 cashews, 2 tsp ghee

Method:

Melt ghee in pan and roast cashews in it. Once fried, put cashews aside.

In ghee, roast rice flakes until they become golden brown in color.

Add saffron to boiling water in another pan. Now add flakes to it and allow them to get cooked for 4 minutes. Add sugar and cardamom.

Stir continuously till non-sticky mixture appears. Add roasted cashews.

Transfer dish to plate and serve hot.

Fruit raita

Ingredients:

2 bananas, few roasted cumin seeds, ¼ tsp chili powder, 1 tsp sugar, 1 tsp ground cumin, 75gm seedless grapes, rock salt to taste, 350ml plain curd, 50 gm shelled walnuts

Method:

Chill curd beforehand. Now add grapes and walnuts to it.

Slice banana directly into bowl and fold in gently before banana turn brown.

Now add sugar, ground cumin, salt and mix nicely.

Sprinkle cumin seeds and some chili powder and serve chilled.

Curd potatoes

Ingredients:

Oil for frying, 1 tsp roasted cumin powder, 2 cups curd, 3 boiled potatoes, ½ tsp ground black pepper, 1 tbsp mint leaves, 1 minced green chili, ½ tsp red chili powder, rock salt to taste

Method:

Beat curd in nice manner and add salt, black pepper, green chili- mint leaves paste and red chili powder.

Chop boiled potatoes into small pieces.

Fry these potato pieces in heated oil in pan so that they turn golden brown in color.

Add potatoes to curd and mix well.

Sprinkle cumin powder and serve.
